Prepare the Gravy:Heat oil or ghee in a heavy-bottomed pan. Add cumin seeds, bay leaves, green cardamom pods, and cinnamon stick.

Add finely chopped onions and sauté until golden brown.

Add ginger-garlic paste and sauté for another 2 minutes until the raw smell disappears.

Add turmeric powder, red chili powder, and coriander powder. Cook the masala for a few more minutes.

Add Yogurt and Cashew Paste:Whisk the yogurt and add it to the masala. Cook for a few minutes until the yogurt is well incorporated.

Add the cashew nut paste, stirring continuously to avoid lumps.

Cook the Potatoes:Gently place the peeled and pricked potatoes into the gravy.
Stir to coat the potatoes with the masala. Add salt according to taste.

Simmer on low heat for about 15-20 minutes, allowing the potatoes to absorb the flavors.

Prepare for Dum (Slow Cooking):Transfer the potato and gravy mixture to a heavy-bottomed pot suitable for dum cooking.

Seal the pot with aluminum foil or dough to trap the steam inside.
